Summer night in Montefoscoli



Summer night in Montefoscoli
Montefoscoli is a little village, the village where I live, and each year there is a festival.
Every year the topic of this festival changes, this is year the theme is “Live in Montefoscoli in the year 1900”
The inhabitants of Montefoscoli wear strange costumes and hairstyles, the women wear a long brown skirt and brown shirt, their hair is gathered in a chignon.
The men instead wear brown trousers and plaid shirts.
The whole village is festooned with bales of hay and olive tree branches and around Montefoscoli you can feel the atmosphere of  the early 20th century.
This year the festival was held on 20th of August, but every year the date changes.
During the day there were performances, the inhabitants marched through Montefoscoli.
In the evening there was a dinner around the village, you could eat at very peculiar tables, bales of hay transformed in table and chair .. It was a fantastic idea! The people who came to eat found this thing amazing!
You could taste classic Tuscan foods, like “zuppa”(cabbage soup), “trippa” (tripe)  “tortellini alla montefoscolese” (tortellini with cream and tomatoes), “lasagne”, grilled bread and grilled meat; and delicious desserts like “tiramisu” (cocoa powder mascarpone, Italian cheese, and Pavesini buiscuits), “torta della nonna” (grandma's cake, with cream and pine-kernels).
After the dinner in the upper part of Montefoscoli some guys played the guitar and sang, instead in the lower part of the village some girls danced.
All those who went to Montefoscoli this day were happy, because by now no one organises this kind of festival any more!

TIRAMISU'

TIRAMISU'

Ingredients for 8 people:

- 500 g. Mascarpone cheese 
- 6 eggs 
- 250 g. sugar
- 1 package of Savoiardi 
- 1 cup espresso coffee 
- cocoa powder

Preparation:


Beat the egg yolks and the sugar (1) at high speed in a bowl (2) and 

mix with a whisk until you obtain a creamy mixture (3). 



Tiramisù


Add the mascarpone (4), and stir the ingredients well. Beat the egg whites until foam, adding a pinch of salt and pour into the bowl (5-6).

Dip the Savoiardi into the coffee and place them in a tray.

Layer some of the mascarpone cream over the biscuits.

Repeat all layers. 



Top with unsweetened cocoa powder.


Tiramisù


Refrigerate at least 2 hours and serve cold.

Tiramisù


TIRAMISU’

Ingredients for 8 people:

- 4 eggs
- 4 tablespoons of sugar
- 3 cups of coffee
- 1 pack of Pavesini
- 1 tub of Mascarpone (Italian cream cheese)

PREPARATION:
- Make a coffee, when it is ready pour it in a dish, letting it cool. While the coffee is cooking  separate the egg whites from the yolks.

- Beat the egg whites. It is advisable to work as quickly as possible to make sure the beaten egg-whites will not become liquid again.

- Beat the egg-yolks. The yolks will become creamy, add the sugar and continue beating. Next, add the mascarpone and beat until everything is homogeneous.

- Mix the egg whites with the cream, you need to be very careful. You shouldn't see any lumps of the beaten egg-whites.

- Get a small pie dish . Every dish is perfect but if it is rectangular it is better. Dip the pavesini into the coffee. Hold them in the coffee for some minutes.

- Fill the whole bottom of the dish with pavesini side by side.

- Now add about half the cream on top of the pavesini.

- Depending on the dish and size of it the second layer may need more Pavesini and cream. If in doubt, save a bit more of the cream.

- The next step is to put the tiramisu into the fridge for some hours. It's better to prepare it the day before serving it. Finally you should sprinkle some cocoa powder on top of the dish.



Tiramisu’ is ready to eat !
